(i usually make tables that end up in Word-document scientific manuscripts, so I don’t need all of gt’s features.) i usually use knitr::kable() as much as possible and tweak by hand in the end. i think i’ll recommend this package.

For simple/short tables you can get away with one chunk targeting both. For long multipage tables it’s still a nightmare.
